Yerba Mate and Ageing

Depending on where you go in South America, your yerba mate might be aged very differently.

For instance, Brazilians prefer their yerba mate to be very green and un-aged.  Some people claim that this type of yerba mate, known as chimarrão, is the strongest in terms of its antioxidant and nutritional power.  Others find this style too bitter or hard on the stomach.

In Argentina and Paraguay, there is a distinction between one-year-old yerba mate and two-year-old yerba mate.  Many people feel that two-year-old yerba mates have the most balanced and tasty flavor.  On average, EcoTeas yerba mate hits the shelves at around 18 months.  Good timing!
